Sweet and Savoury Simmered Satoimo

Soy sauce1 tbsp
Mirin1 tbsp

Peel the satoimo, rub with salt to remove the sliminess, then parboil.

Place the dashi stock, soy sauce, mirin, sugar, and satoimo into a saucepan and bring to a boil.

Cover with an otoshibuta (drop lid) and simmer over a low heat for 20 minutes, or until most of the liquid has reduced.
