Aburaage (fried tofu pouch)1/2 sheet
Dashi stock400ml
Soy sauce1 tbsp
Mirin1 tbsp
Sugar1 tsp

Instructions

Pour hot water over the aburaage to de-oil it. Then, simmer it with a small amount of soy sauce, sugar, and mirin until well-flavoured.

Add the remaining soy sauce and mirin to the dashi stock and heat through.

Heat the udon noodles, place them in a serving bowl, pour over the broth, and top with the aburaage and spring onion to serve.
