Simmered Flounder

Flounder fillets2 fillets (160g)
Water150ml
Soy sauce1.5 tbsp
Mirin1 tbsp
Sugar1/2 tbsp
Ginger (thinly sliced)3 slices
Instructions

Score the flounder with a cross and pour boiling water over it to remove any fishy odour.

Bring the water, soy sauce, mirin, sugar, and ginger to a boil in a pan, then add the flounder.

Cover with a drop lid and simmer over a low heat for 15 minutes, finishing by spooning the simmering liquid over the fish.
