Chicken Curry-Style Croquettes (Baked)

Ingredients

Potatoes2 (200g)
Chicken breast mince80g
Onion1/4
Curry powder2 tsp
Breadcrumbs3 tbsp
Salt and peppera pinch

Instructions

    Boil or microwave the potatoes until soft, then mash them.

    Finely chop the onion and sauté it with the chicken mince in a non-stick pan until cooked through.

    Combine the mashed potatoes, sautéed chicken and onion, curry powder, salt, and pepper. Mix well and shape into oval patties.

    Evenly coat the patties with breadcrumbs and arrange them on a baking tray lined with aluminium foil.

    Bake in a toaster oven for 5 minutes on each side, until both sides are crispy.
