Japanese-style Chicken Curry (Dashi-based)

Chicken breast (skinless)150g
Onion1/2
Daikon radish3cm
Dashi stock400ml
Curry powder2 tsp
Soy sauce1 tbsp
Mirin1 tbsp
Potato starch2 tsp
Cooked rice150g
Instructions

Slice the chicken breast thinly, slice the onion thinly, and cut the daikon radish into ginkgo leaf shapes.

Bring the dashi stock to a boil in a pot, add the daikon radish, and simmer for 5 minutes.

Add the chicken and onion, and simmer for 10 minutes, skimming off any scum.

Add the curry powder, soy sauce, and mirin, then thicken with a potato starch slurry.

Serve with cooked rice.
