Koya Tofu3 pieces (approx. 50g)
Dashi Broth300ml
Soy Sauce1 tbsp
Mirin1 tbsp
Sugar1/2 tbsp
Instructions

Rehydrate the koya tofu in water, thoroughly squeeze out the excess water, and cut into easy-to-eat pieces.

Add the dashi broth, soy sauce, mirin, and sugar to a pot and bring to a boil.

Add the koya tofu, place a drop lid on top, and simmer over low heat for 15 minutes until the flavours are absorbed.

Turn off the heat and leave to stand for 5 minutes to allow the flavours to soak in. Serve.
