Soy sauce1.5 tbsp
Mirin1 tbsp
Sugar1 tsp
Water100ml
Julienned ginger1 knob

Remove the innards from the squid, slice the body into 1cm-thick rings, and cut the tentacles into easy-to-eat pieces.

In a pot, add water, soy sauce, mirin, sugar, and ginger, and bring to a boil.

Add the squid, cover with an otoshibuta (drop lid), and simmer over a low heat for 10 minutes.

Once the simmering liquid has reduced by about half, transfer to a serving dish.
