Mackerel in Miso
A classic mackerel in miso dish. While slightly higher in fat, it is rich in good quality protein. Suitable for the remission phase.

Mackerel fillets2 fillets (200g)
Miso paste2 tbsp
Sugar1 tbsp
Mirin1 tbsp
Sake2 tbsp
Water100ml
Ginger slices3 slices
Instructions

Make cross-shaped incisions on the mackerel fillets and pour boiling water over them to remove any fishy smell.

In a pot, combine water, sake, sugar, and ginger, bring to a boil, then add the mackerel.

Cover with a drop lid and simmer for 10 minutes over a low heat.

Dissolve the miso in the mirin, add to the pot, and simmer for a further 5 minutes until reduced. Serve.
