Flounder fillets2 fillets (200g)
Soy sauce1.5 tbsp
Mirin1.5 tbsp
Sugar1/2 tbsp
Water100ml
Ginger slices3 slices
Instructions

Score the flounder fillets with a cross-cut and pour boiling water over them to remove any fishy odour.

In a pot, add the water, soy sauce, mirin, sugar, and ginger, and bring to a boil.

Add the flounder fillets, place a drop lid over them, and simmer over a low heat for 12 minutes.

Once the simmering liquid has slightly reduced, transfer the flounder to a serving dish and pour the simmering liquid over it.
