A gentle, mildly spiced Mapo Tofu served as a rice bowl. Made with minced chicken to reduce fat, this dish is suitable for the remission phase.

Ingredients

Silken tofu1/2 block (150g)
Minced chicken breast60g
Cooked rice1 serving (200g)
Miso paste1/2 tbsp
Soy sauce1/2 tbsp
Chicken stock powder1/2 tsp
Potato starch1/2 tbsp
Spring onion1/4 stalk

Instructions

    Cut the tofu into 1.5cm cubes and finely chop the spring onion.

    In a non-stick pan, sauté the minced chicken and spring onion, then add the miso paste, soy sauce, chicken stock powder, and 100ml water.

    Add the tofu and simmer for 2 minutes, then thicken with a potato starch slurry.

    Pour generously over the cooked rice and serve.
