Ingredients

Chicken breast mince100g
Egg1
Cooked rice1 serving (200g)
Soy sauce1 tbsp
Mirin1 tbsp
Sugar1 tsp
Spring oniona little

Instructions

    Bring water to a boil in a saucepan, then turn off the heat. Gently place the room temperature egg into the hot water, cover with a lid, and leave for 15 minutes to make a slow-cooked egg.

    In a separate saucepan, add the chicken breast mince, soy sauce, mirin, and sugar. Stir constantly with cooking chopsticks over medium heat until the mince is cooked through and crumbly.

    Place the cooked rice into a rice bowl, then top with the chicken mince.

    Place the slow-cooked egg in the centre, scatter with finely chopped spring onion, and serve.
