Ingredients

Chicken breast mince200g
Shimeji mushrooms1/3 pack
Enoki mushrooms1/3 pack
Shiitake mushrooms2
Breadcrumbs2 tbsp
Dashi stock150ml
Light soy sauce and mirin1 tbsp each

Instructions

    Finely chop the onion, microwave it, and let it cool.

    Mix the mince, breadcrumbs, and a pinch of salt, knead, and shape into patties.

    Cook both sides in a non-stick frying pan, then cover with a lid and steam-fry over low heat for 5 minutes. Remove from the pan.

    Separate the mushrooms into small clusters, simmer them with the dashi stock, light soy sauce, and mirin, then thicken with a cornflour slurry.

    Pour the mushroom thickened sauce over the patties.
