Ingredients

Daikon radish1/3
Dashi stock400ml
Soy sauce1.5 tbsp
Mirin1 tbsp
Sugar1 tsp

Instructions

    Thickly peel the daikon radish and cut into 2cm thick rounds.

    Place the dashi stock and daikon radish in a pot and bring to a medium heat.

    Once boiling, add the seasonings, place a drop lid on top, and simmer for 20 minutes over low heat.

    Continue to simmer until a bamboo skewer passes through easily, then it's ready.
