Simmered Tuna and Daikon Radish
Daikon radish is slowly simmered, absorbing the rich flavour from tinned tuna in water. An easy recipe using store-cupboard ingredients.

Tinned tuna (in water)1 tin
Daikon radish1/3
Soy sauce1.5 tbsp
Mirin1 tbsp
Water200ml
Instructions

Cut the daikon radish into 1.5cm-thick half-moon slices.

Place the water and daikon radish in a saucepan and simmer for 10 minutes until tender.

Add the tinned tuna, including its liquid, then season with soy sauce and mirin.

Simmer gently over a low heat for 10 minutes until the flavours are absorbed. Serve.
