Soy sauce1.5 tbsp
Mirin1.5 tbsp
Sake2 tbsp
Sugar0.5 tbsp
Water100ml
Instructions

Remove the guts and cartilage from the squid, slice the body into 1cm-thick rings, and cut the tentacles into two-tentacle portions.

In a pot, bring the water, sake, mirin, and sugar to a boil.

Add the squid, add the soy sauce, cover with a drop lid, and simmer over a low heat for 15 minutes.

Once tender, reduce the simmering liquid slightly and serve.
