Bouillabaisse-Style Soup

Saffron-flavoured soup with white fish and prawns. A low-fat adaptation of a Southern French fisherman's dish.

Ingredients

Cod fillet1 piece (80g)
Peeled prawns40g
Onion1/4
Celery1/4 stalk
Canned chopped tomatoes1/4 can (100g)
Water400ml
Consommé2 tsp
Saffron (or turmeric)A pinch
Salt and pepperTo taste

Instructions

    Cut the cod into bite-sized pieces and sprinkle with salt. Slice the onion and celery thinly.

    In a pot, add water, canned chopped tomatoes, consommé, and saffron, and bring to a medium heat.

    Add the onion and celery and simmer for 10 minutes, then add the cod and prawns and simmer for another 5 minutes.

    Take care not to break up the fish too much. Adjust the seasoning with salt and pepper to finish.
