Ingredients

Chicken breast (skinless)150g
Spring onion (finely chopped)1/4 stalk
Potato starch1 tbsp
SaltA pinch
Chinese cabbage2 leaves
Carrot1/4
Silken tofu1/4 block
Dashi stock600ml
Soy sauce1 tbsp
Mirin1 tbsp

Instructions

    Mince the chicken breast in a food processor, then mix with the finely chopped spring onion, potato starch, and salt to make the meatball mixture.

    Pour the dashi stock into a pot, add the soy sauce and mirin, and bring to a medium heat.

    Roughly chop the Chinese cabbage, slice the carrot thinly, and add them to the pot.

    Using a spoon, form the mixture into bite-sized balls and carefully drop them into the pot.

    Once the chicken meatballs are cooked through, add the tofu and simmer for 2-3 minutes. Serve.
